
Fully 384 separate villages throughout the Burgundy wine region are permitted to produce wine labelled Bourgogne. Given the enormous number of microclimates involved in an area so vast, it is difficult to pinpoint a typical style. At the most basic level, Bourgogne is the general term for a wine from Burgundy. So Bourgogne Blanc, Bourgogne Rouge and Bourgogne Rosé are White Burgundy, Red Burgundy and Rosé Burgundy respectively.
Bourgogne Rouge, like all red wines from Burgundy, is made from pinot noir. In the cool climate of Burgundy, pinot noir expresses itself in a way that is much different than those that are typical of the New World. Its fruit is less jammy and more focused. The acidity is more apparent, providing balance and structure to the wine, critical to its impressive pliability with great number of dishes.
