
Domaines Ott was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the world’s most prestigious wines.
These wines are made at three distinctively different estates in the Bandol and Côtes de Provence appellations: Château Romassan, Clos Mireille and Château de Selle.
Château de selle: Château de Selle, the 18th-century home of the Counts of Provence, is located in the Côtes de Provence appellation perched on chalky hills enjoying generous amounts of sunshine. The arid soil is comprised of 40-50% stone, and despite the presence of highly fertile quantities of clay, produces small and concentrated yields. The winery is located on 345 acres of which 160 acres are cultivated. Each year additional acres are prepared for planting, a process in which the earth is mechanically tilled and the stone is crushed to maintain the correct balance in the soil.

Winemaker Notes: The blend for the 2007 Château de Selle Côtes de Provence rosé is: 35% Grenache, which adds warmth to the wine 30% Cinsault, which adds finesse and fullness 20% Cabernet Sauvignon, which adds complexity, blending elegance and vigor 15% Syrah, which is added in small quantities to round off the wine and give colour and a touch of liquorice. The grapes are all hand picked and go through a stringent selective grape sorting. The grapes go through an extremely delicate pressing process. Fermentation is done in thermo-regulated vats followed by ageing in oak casks for six to nine months. Tasting Notes: The 2007 Château de Selle Côtes de Provence rosé has a pale melon colour with salmon pink reflections and a very intense floral nose, layered with spicy notes of cinnamon. The palate is rounded, long and fresh, with all the lushness of white-fleshed fruit. This is an elegant, refined rosé, ideal as an aperitif but equally good throughout the meal with a range of delicate or strong-flavoured foods. |
