Courbissac’s
30 hectares is situated in the delimited area of ‘La Livinière’,
which lies in the heart of Minervois. This natural area, called
Petit Causse, lies between the foothills of the Cevennes and the
Montagne Noire.
This region is one of the
sunniest in France and the precipitation is very low. The ripening
of the
grapes (Mourvèdre, Syrah, Carignan, Grenache, Roussane, Marsanne)
benefits from ideal climatic conditions, combined with thermal
amplitude: daily heat, particularly important, attenuated by
coolness at night, induced
by fresh air sweeping down from the mountain ridges.
The cultivation follows the principles of biodynamics. This method, which is respectful of the environment, allows the vines and the soil to play the leading parts in a story which tells of the expression of the terroir. The resultant quality of the grapes and the full-bodied wines which are being produced from them, high in colours and flavours, reveal the complexity of the chalky soil and the richness of this environment. The wines are created from the special alchemy which unites human hearts, the soil and the vines.!
