10 Cane stalks are hand-harvested and pressed within the day to maximize freshness. The intention is not to extract every ounce of juice from the sugar cane; only the pure, "first press" juice is used. After pressing, the liquid is carefully cleansed to
avoid stripping off delicate ingredients that give the rum its lightly
golden color and rare bouquet.
