What makes this Cognac extraordinary is the blend of extremely old eaux-de-vie that has been nurtured in the famous demi-johns in the Delamain cellars.
Delamain Très Vénérable Grande Champagne Cognac is blended from a range of Cognacs averaging 45 to 50 years of age, which have been reduced by natural evaporation to approximately 45 percent alcohol by volume.
Delamain Vesper Grande Champagne Cognac is blended from a range of cognacs averaging approximately 35 years of age, brought to consumption strength by the gradual addition of "vieilles faibles," very old, weak Grande Champagne Cognacs of 15 percent alcohol content.
Golden yellow colour it has a subtle nose with hints of orange blossom, vanilla and oaky spice. On the palate there is an initial touch of tannic spice, followed by mellower notes with some honeyed oak and dried fruit. Quite lengthy finish with a little kick of spirit.
At 25 years old a delicate floral character of lime tree and hyacinth on the nose. The palate is richer than the nose suggests with orange spice, vanilla and old oak. Lighter in body than the Fontvieille, the XO has an elegant finish with much finesse and just a tickle from the spirit.
