The Ébano Viñedos y Bodegas, S.L. estate comprises 48 hectares of vineyards in Quintana del Pidio and Gumiel del Mercado in the Ribera del Duero D.O. The appellation is known for its harsh continental climate, the “fire and ice” of legend, and the wines show a powerful character born of the marriage of uncompromising winemaking and exceptional terroir.
Vines are mature, with an average age of between 14 and 25 years. Around half are traditionally bush trained and the other half are trellised on wires. Viticulture on the estate is run according to modern scientific lines, with extensive soil sampling and daily analysis of the canopy during the growing season. Picking is all manual and the grapes are delivered to the winery in 17kg containers. Selection is severe, with yields of 17.5 hectolitres per hectare from the bush vines and 28 hl/ha from the wire trellised ones. Combining this rigorous approach with the higher than average vine age means that the estate has some of the finest raw material for winemaking of any producer in the Ribera del Duero appellation.
Fermentation is in stainless steel, and maturation is in wood, with a barrel cellar which is completely replaced every three years.

Grape Varieties: 100% Tempranillo. Food Matching Note: This wine loves red meat. Steak is probably best. Tasting Note: Intense, almost opaque ruby red. Excellent integration of oak and fruit on the nose. Mulberries, mature black fruits and mineral notes. Soft and ripe in the mouth with a powerful sweet tannin structure coated with toasty, spicy, creamy new oak. Vinification Note: Mainly sourced from the estate's wire trained vines, the grapes are selected rigorously on the purpose-built table and are de-stemmed prior to fermentation in stainless steel at 28C for around 10 days. Malo in stainless steel is followed by ageing for 13 months in French oak and then 12 months in bottle. |

Grape Varieties: 100% Tempranillo. Food Matching Note: This powerful red is delicious matched with red meat dishes, grills, game and hard cheeses. Tasting Note: Intense, almost opaque ruby core with a purple rim on first release, this powerful young wine shows a highly fruity nose of ripe blackberries, ripe plums and strawberries. The mineral notes of the terroir, and a hint of fresh greenness work wonderfully as a foil to the exuberant fruit. On the palate there is a medium to full bodied mouth feel with powerful structure given by warm, ripe tannins. Vinification Note: Mainly sourced from the estate's wire trained vines, the grapes are selected rigorously on the purpose-built table and are de-stemmed prior to fermentation in stainless steel at 28C for around 10 days. This is followed by ageing for four months in French oak and then two months in bottle. |
