Scotch Single Malt Whisky - Glenmorangie

In the far north of Scotland, near the ancient Royal Burgh of Tain, lies Glenmorganie, "The Glen of Tranquility', where malt whisky has been distilled since before 1700. The distillery has an air of timelessness; the methods and crafts they employ today differ little from those of their forbears.

They use the same fine barley locally grown in Ross-shire and lightly peated during malting. The water rises in the Tarlogie Springs close to the distillery, and having filtered through lime and sandstone strata over the course of 100 years, is unusually hard and rich in minerals.

Glenmorangie's elegant swan-neck stills are the tallest in the Highlands, so only the lightest and purest vapours can ascend and condense. The whisky is matured in selected casks of American Mountain oak which allow the natural flavour of Glenmorganie to develop fully.

The casks rest in low stone-built buildings with earthen floors, permeated by fresh sea air; a gentle local climate ensuring a steady path to full maturity.

Nose: perhaps the most enigmatic aroma of them all; delicate yet assertive, sweet yet dry, young yet oaky: a malty tone poem.

Taste: flaky oakiness throughout but there is an impossibly complex toastiness to the barley which seems to suggest the lightest hint of smoke.

Finish: amazingly long for such a light dram, drying from the initial sweetness but with flaked almonds amid the oakier, rich cocoa notes.

Balance: remains one of the great single malts: a whisky of uncompromising aesthetic beauty from the first enigmatic whiff to the last teasing and tantalising gulp. Complexity at its most complex.

Nose: typical Morangie complexity, but the grapes notes added act almost like a prism to show their varied hues.

Taste: fruit and spice about as the oak goes in search of glory: barley stands in its way.

Taste: light, deftly sweetened and juicy to the end.

Balance: this replacement of the original Port finish shows a genuine understanding of the importance of grape-oak balance. Both are portrayed with clarity and confidence. This is a form of cask finishing that has progressed from experimentation to certainty.

Nose: delicate cinnamon on toast and a drizzle of greengage and sultana.

Taste: equally refreshing and dense on the palate as the bitter-sweet battle goes into overdrive; excellent weight and body.

Finish: remains clean and precise, allowing some custard onto the apple strudel finale.

Balance: great to see French casks that actually complement a whisky - so rare! This has replaced the Madeira finish. But there are similar sweet-fruit characteristics. An exercise in outrageously good sweet-dry balancing.

Colour: bright gold.

Nose: rich, sweet and spicy with lilting aromatic top notes. At full strength, the aroma is rich in toffee and crème-brulee, drizzled with fresh menthol, warm cinnamon and deep aniseed spices, and served with coconut and toasted almonds embedded in milk chocolate. Mint humbugs and a sweet honey-lemon complex follows bringing a sweet elegance to complement the deep nuts and spices.

Taste: the mouth-feel is deliciously smooth, rich and luscious, full of sumptuous sweet and fruity flavours. The taste is exceptionally well-rounded and balanced. Initially crème-brulee emerges with a burst of mouth-watering pineapple, poached pears and apricots, smothered with vanilla custard. Later the warm sweetness and gentle oiliness of hazelnuts in soft buttery fudge melts on the tongue. This is closely followed by hints of sizzling cinnamon spice and ground nutmeg emerging with some peachy fruit. Shortly after, the palate is gently cleansed by a hint of cooling mint and fresh menthol.

Finish: the finish is long and smooth with a lingering mix of honey and almond, coconut ice and traces of aniseed.

Savour: The lingering late summer scent of fruit orchards laden with cherries and plums and hedgerow blackberries is melded with lavish chocolate and coffee tones followed by the sudden, icy clarity of fresh wild mint. Then, a sensation of intense warmth, heady with the aroma of dark, syrupy, soft fruits lingers, before melting softly away.

Entice: The initial explosion of sweet and bosky redcurrant and blackberry forest fruits bursts onto the tongue to be replaced by the sugary spiciness of mint humbugs that cools the sides of the palate. Then a clear and enlivening herbal flavour of aniseed sprinkled with cinnamon emerges, leaving the mouth tingling with anticipation, only to be sated by background flavours of bramble and warming spiciness.

Tantalise: Glenmorangie 25 Years Old Single Malt Whisky deserves much respect. The mahogany liquid glinting enticingly in its decanter should be poured, sniffed and then sipped. Having taken a QUARTER OF A CENTURY to reach you, reward it with your careful consideration.
