Shortly after Prohibition ended in the United States, Heaven Hill Distilleries, Inc., was founded in Bardstown, Kentucky by the Shapira family to produce and market Bourbon and premium American whiskeys. At the time, it was as speculative a new business venture as the dot com start-ups of the 1990's -- a company founded with no brands, no available stocks of whiskey, and at the height of the Great Depression. Today, the company has overcome these initial challenges and grown to become the largest independent, family-owned producer and marketer of distilled spirits in the country. Elijah Craig 12-year-old is a true Small Batch premium Bourbon, and had that distinction before the term even existed. Bottled exclusively from a dumping of 100 barrels or less, the brand carries the name of Rev. Elijah Craig, the Baptist minister widely considered the "Father of Bourbon." He discovered the method of making true Kentucky Bourbon when his stored his wares in barrels that had been charred in a fire.

Elijah Craig is highly acclaimed - it was awarded "Best of the Best Bourbon" in 2001 by Whisky Magazine and received a Double Gold Medal at the San Francisco World Spirits Competition. Whiskey expert Stuart MacLean Ramsay writes, "Rich, full bodied and warming with sweet oak, caramel and rye flavours; thick finish with notes of liquorice and vanilla."

Nose: riddled with seams of rich rye, a coppery element ensures the honey does not escape the heady atmosphere.

Taste: close your eyes and just allow the stunning rich corn and vivid rye to overwhelm the senses. Liberally spiced, but couched in oily shock-absorbers; all the soft liquorice notes you would demand of this vintage are there.

Finish: long, with wonderful strands of strawberry preserve and other tart fruits. The vanillas cushion the impact.

Balance: now this is more like it. Screams Bardstown. Sings lullabies. Sheer class.
