SINCE 1897, there has been a quiet revolution unfolding in the heart of the Scottish Highlands. The naturally soft water of the Alt-na-Frith burn is introduced to tender Scottish barley and, later, from the tall, slim copper stills of the Tomatin Distillery a mellow, fruity spirit is born.
Gentle maturation in carefully selected casks lets the subtle character of this distinctive single malt emerge, ensuring that the softer side of the precious spirit is never overpowered.
The French Collection exhibits the unique influence imparted by different types of French Wine & Spirits casks in an exceptional showcase. The whisky, distilled in 2008, was laid down in traditional Scotch Whisky oak casks prior to being moved into Cognac, Sauternes, Rivesaltes and Monbazillac casks for its final maturation, resulting in a magnificent collection.
Tomatin / 12 Year Old Monbazillac Cask Finish: Distilled on 25th April 2008, this whisky’s aroma dances between notes of dark, maple syrup and intense espresso, balanced with cinnamon baked apples. On the palate there is a sweet cereal flavour combined with sweet milk chocolate and honeycomb ahead of subtle spices and emerging nutty flavours. The finish is rich with walnut and maple syrup.
Tomatin / 12 Year Old Sauternes Cask Edition: Distilled on 19th September 2008, this whisky brings a burst of peach and apricot on the nose, calmed by rich Manuka honey. The sweet honey continues on the palate accompanied by coconut and ginger. The finish is wonderfully sweet and fresh with a syrupy mouth feel indicative of the Sauternes wine that once occupied the cask.
Tomatin / 12 Year Old Rivesaltes Cask Edition: Distilled on 19th September 2008, this whisky marries our characteristic fresh fruit notes incredibly well with the sweet nutty flavours for which Rivesaltes wine is known. Contrasting sweet and bitter flavours dominate the palate, held together by an underlying barley aroma. The finish is velvety with the flavours from the palate lingering for some time.
