BLEND: 80% Chardonnay and 20% Pinot Noir.
Produced in very limited quantities, only in the best years, from a majority of Chardonnay, and the finest Grands Crus. It enhances the essence of the terroir of Champagne while maintaining the purest respect for the House style.
The extended ageing in the cellars is carried out with a natural cork closure during more than 8 years, while the riddling and the disgorging are both carried out by hand. The precise gestures give the wine its unparalleled expression.
COLOUR: Intense and bright yellow.
NOSE: Expressive and full, cooked white fruits, clear honey, touch of pastry with a hint of vanilla.
PALATE: Generous and opulent, notes of the nose, balance between power and tension, the finish is fine, long and harmonious.
FOOD PAIRINGS: Thanks to the remarkable pedigree of the crus that go into its blend, Perle d’AYALA 2006, pairs marvellously with noble dishes such as semi-seared foie gras, a fattened Bresse chicken with mushrooms or a braised veal sweetbread.
