8 years matured in American oak bourbon casks and then three years in Pedro Ximénez sherry casks, un-chillfiltered, bottled at cask strength.
This unpeated Bunnahabhain is finished in classic Spanish Pedro Ximénez (PX) sherry casks personally selected by the Senior Blender. The Spanish grapes are traditionally laid out after harvest to further desiccate and dry. The Andalucía sun causes the grapes to shrivel up, similar to raisins and become high in sugar. After pressing, the grapes are matured in the Spanish oak butts to create the legendary fortified dessert wine high in viscosity and intensity.
It is the impact of the sweetness and richness of the PX cask on our whisky that Dr Kirstie McCallum, the Senior Blender was keen to see come to fruition, the result has not disappointed! An extremely limited release which will be treasured by all fans of Bunnahabhain.

Colour: Deep gold.
Nose: Hints of dried fruit and toffee, chocolate (A 'Trio' biscuit for those growing up in the 80's), honeyed nuts with a gentle spice.
Palate: Dried fruit with hints of dates, raisins and figs, soft salted toffee, and caramelised nuts, hints of ginger and nutmeg.
Finish: Long lingering fruits and nut finish.
