COUNTRY/REGION: France/Côtes du Roussillon.
GRAPES: Syrah, Grenache and Carignan.
Passion for terrior took Michel Chaputier south to Roussillon where he bought land in the village of Latour de France. Domaine Bila-Haut is farmed both organically and bio-dynamically.
The plots used are located on the slopes of the high Agly Valley. They are composed of gneiss and schist from the Devonian Period. The grapes are hand-harvested and entirely destemmed. The extraction is only performed by punching of the cap whilst maceration lasts from 2 to 4 weeks according to daily tastings and is then aged in vats.
TASTING NOTES: A deep garnet red with aromas of black cherry. The palate is fleshy, wellstructured with the warm and savage of the soils of the Roussillon area.
