WINEMAKING: Wine produced from well-selected grapes, in perfect ripeness and manually harvested from our own vineyards around the plot Finca de San Rafael. After destemming, the grapes were fermented in stainless steel tanks of 12,000 litres at 28-30°C. After a maceration of 15 to 20 days, the grapes were fermented by the malelactic process, giving the wine its adequate acidity. The wine is placed in already-used barrels of 40% American oak and 60% French, where it remains for two years and then two more years ageing in bottles in the cellar.
TASTING NOTES: A high Graciano content gives incredible freshness to this single estate Riojan legend.
