GRAPES: 100% Sauvignon Blanc.

VINEYARD: The Cenizas de Laberinto Sauvignon Blanc comes from vines planted in 1996 on volcanic ash soils (cenizas is Spanish for ashes) with a loamy character. It has a western orientation and is exposed to the winds that blow off the vineyards.
VINIFICATION: The juice is macerated in the press for 4-6 hours at 11°C before juice is fermented at low temperatures from 13-16°C. The wine didn't go through malolactic fermentation and was kept in contact with the lees for three months before bottling.
TASTING NOTES: A fresh profile with minerality, poise, and an intense yet subtle nose of citric, herbal and wet stone aromas. The palate is sharp and precise, vibrant and very focused with very high acidity that makes you salivate, it doesn't dry your palate, it makes you want to keep drinking. Its very tasty, ending with a mineral, supple, almost saline note. It's as if it were made out of stones, not grapes!
FOOD MATCHING: Grilled sea bass with asparagus and chips, young cheeses, Asian cuisine with herbs and lime.
DELIVERY: All our wines are stored in our importers bonded warehouse’s, which have the optimum environment for fine wine storage, by carefully regulating temperature, humidity and other microclimatic factors.
